I asked the same question a while ago. Consensus seems to be that if you go pull on some pieces and they don't budge then you are good to cut. If any are loose you need to wait until rooted. As far as bagging a lot of that is personal preference. I catch the clippings if I am cutting more than a 1/4" off. If you don't catch the clippings they need to be small enough where they can work down in to the canopy instead of just laying on top.

 

Like twodollarblue said as long as it's rooted you should be good to mow. I mowed at about the 2 week mark after laying the sod.

 

I started mowing my new Zeon at 2 weeks. I made sure to run at an angle that differed from the direction of the seams. I only sucked up one straggler that hadn't rooted yet, and it was a smaller filler piece.
