We use sand to correct the earth's imperfections. Sand is obviously light and easy to move thus between mowing, watering/rain, wind, and traffic wouldn't a lot of it be displaced over time? Ultimately my underlying question is, if you're using sand to level, is it almost a guarantee that you'll have to continuously level every so often?

Less than you would think - the bermuda really sort of locks it in place. That said, there is always a risk of some settling and other environmental influences (mole/gopher damage, erosion, etc.). I also think leveling is very addictive - once you experience mowing a smooth lawn you will likely want to do more. :D
